[realfood] Fettuccine with Vodka Sauce & Asparagus

FETTUCCINE WITH VODKA SAUCE & ASPARAGUS

Boil 12 oz fettuccine as pkg directs, add 1 pound asparagus, cut bite size, 5 min. before pasta will be done and reserving 1 cup cooking water before draining.

Heat 1 tbs olive oil in a skillet. Add chopped small onion, saute 5 min. or until soft. Add 1 pint grape tomatoes, 1 cup vodka sauce, 1/2 tsp salt and pepper to taste.

Bring to a simmer and cook 1 min. or until tomatoes soften. Toss with drained pasta and asparagus, 2 tbs chopped parsley and reserved cooking water as needed. Serve with grated Parmesan. NOT SURE OF SERVINGS.*
