[realfood] Banana Walnut Pancakes with Fruit Medley

BANANA WALNUT PANCAKES WITH FRUIT MEDLEY

1 each mango and papaya or 3 cups berries or sliced bananas
1 1/2 cups flour
2 tbs sugar
1 tbs baking powder
1/4 tsp salt
1/2 cup mashed banana
1 1/3 cups milk
1 egg
1/2 cup chopped walnuts
Maple syrup
Honey
Oil for the griddle or skillet

Peel mango then slice fruit from the pit, cut into chunks. Peel and halve the papaya then scrape out seeds, cut into chunks, toss with the mango, and set aside. If using berries, slices strawberries and set aside.

In bowl mix together flour, sugar, baking powder and salt. In 2nd bowl, whisk together banana, milk, egg and walnuts. Stir in dry ingredients until moistened. If too thick, add a bit more milk.

Heat griddle or skillet until hot. Brush with a little oil. Spoon the batter onto the griddle, 1/4 cup per pancake. Cook 2 min. or until the surface is dry and full of bubbles then turn and cook 1 min. longer or until golden brown. Keep pancakes warm in low heat oven. Serve pancakes hot with fruit and drizzle with maple syrup or honey. MAKES 4 SERVINGS.*
