Classic Barbecue Sauce Recipe
In honor of Chicago's Rick Bayless winning Top Chef Masters, here is my take on a classic barbecue sauce.
- 2 tablespoons vegetable oil
- 1 small white onion, diced
- 3 garlic cloves, finely chopped
- 6 ounces tomato paste
- 2 teaspoons ground mustard
- 28 ounces tomato sauce
- 1/4 cup un-sulfured molasses
- 2 tablespoons Worcestershire sauce
- 3 tablespoons white vinegar
- 2 teaspoons kosher salt
- 1 1/2 teaspoons ground black pepper
