I have great results in cookie baking if I use an aluminum insulated
cookie sheet. The cookies are evenly baked this way. I always let them
cool for three minutes and then put them into a plastic tupperware.
When I bake brownies I also put a layer of plastic wrap between each
layer of brownies and one on top to give them added protection. My
scratch brownies dry out after a couple of days if I don't do this even
in tupperware. I use large eggs.
