Ceylonese Omlette

Ingredients:
2 eggs
2 tbsp milk
1/2 cup sliced red onions
10gms dry red chillies
5-6 curry leaves
30ml cooking oil
Salt and pepper to taste

Method:
Beat the eggs along with milk in a mixing bowl.
Heat a non-stickfrying pan. Add oil and allow to heat.
Add sliced onions and curry leaves; saute for 2-3 minutes till onions become a bit tender.
Add the broken red chillies and give a qiuck stir.
Add in the eggs, making sure that the whole pan is covered. Let it cook for 3-4
minutes on one side.

Once done, flip the omelette and allowing cooking for a further 3-4 minutes. The omelette should be slightly golden brown in colour.
Remove and seve garnished with fried red chillies and butted toasted.
