[realfood] Lemon Pork Stir Fry---with Veggies---Wok Recipe

LEMON PORK STIR FRY

1 tbs cornstarch
12 oz pork tenderloin, halved lengthwise, cut crosswise in 1/4 inch thick slices
2 tsp oil
12 oz baby bok choy, quartered crosswise
1 bell pepper, cut into strips
1 cup shredded carrots
2 tbs each stir fry sauce and water
1 tsp grated lemon zest
1 tbs lemon juice

Sprinkle cornstarch over pork, toss until coated. Heat 1 1/2 tsp oil in a skillet or wok. Add pork, stir fry 4 min. or until cooked through. Remove.

Heat remaining oil in wok or skillet. Add bok choy, pepper and carrots, stir fry 4 min. or until crisp tender. Add pork and remaining ingredients, toss until hot. MAKES 4 SERVINGS.*
