LEFTOVER MAGIC FOR VEGGIES
Combine 2 cups cut up leftover cooked vegetables, a 28 oz can fire roasted crushed tomatoes, a 16 oz can rinsed black beans and 1 tbs chili powder in a large pan, bring to a boil.
Simmer 3 min. for flavors to blend. Add some water if it seems thick. Remove from heat, stir in chopped cilantro. Top with sour cream and sliced onion. *
