[realfood] Dress up dishes with fried corn tortilla strips

You can dress up dishes with fried corn tortilla strips.

Slice corn tortillas into strip about 1/4 inch to 1/2 inch wide.

Fry them in hot oil until they just turn brown,
remove from pan.

You can drain them on paper towels.

Use the fried strips instead of croûtons on salads or soups.

Here's a dish my cousins and I made as kids.

*Fried Tortillas & Eggs*

Beat a couple of eggs in a bowl.

Fry some tortilla strips in a skillet with a small amount of oil.

When the strips are crunchy pour the eggs over the strips and cook
like scrambled eggs until done. Salt & pepper to taste.

Put onto a plate and top with salsa and grated cheese.

My sons think is a great dish on weekend mornings.

If you use a wok to fry the strips, you can use a wire rack that goes
on the side of the wok to drain the oil back down into the wok.

With a wok you can make bigger deep fried tortillas for your own
tortilla chips. Or you can fill rolled tortillas with cooked meat and
deep fry for flautas (taquitos). I get big kick using my wok for
Mexican style cooking.

Slow down and enjoy the food!
