[realfood] Chicken Penne in Smoky Chili Cream Sauce

CHICKEN PENNE IN SMOKY CHILI CREAM SAUCE

12 oz uncooked penne pasta
1 1/2 tbs vegetable oil
1 pound boneless skinless chicken breasts, cut into chunks
1/2 cup chopped onion
1 tsp minced garlic
2 cups Alfredo sauce
1 tbs chipotle in adobo sauce
2 tsp chili powder
2 tsp maple syrup
1/2 tsp salt
8 slices cooked bacon, chopped
2 tbs chopped cilantro

Cook penne following package directions. Drain. Heat oil in a skillet and cook chicken 4 min. or until cooked through. Remove to a plate and reserve. Reduce heat. Add onion to skillet and cook 3 min. Add garlic and cook 30 seconds. Stir in Alfredo sauce, chipotle, chili powder, maple syrup and salt. Cook until bubbly. Stir in the chicken.

Place pasta back into the pot and stir in the Alfredo and chicken mixture. Spoon pasta onto a serving platter and garnish with the bacon and cilantro. MAKES 6 SERVINGS.*
