Cherry Banana Macadamian Bread
Makes 1 loaf
1 (10-ounce) jar maraschino cherries
1/3 cup butter or margarine, softened
2/3 cup firmly packed brown sugar
2 eggs
1-3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup mashed ripe bananas
1/2 cup chopped macadamia nuts
Pour the jar of Maraschino Cherries into a collender
to remove the liquid. Reserve 2 tablespoons of juice.
Cut each cherry into slices; set aside. In a bowl add
the butter, sugar, eggs and the 2 tablespoons of
maraschino juice. Mix together till well mixed. In
another bowl combine the flour, baking powder and
salt. Using a whisk stir the dry ingredients till
mixed. Add the 1/3 of the flour and 1/3 of the mashed
banana. Continue to do that till all the flour and
banana is gone. Mix in the cherries and the nuts. Do
not over mix. Lightly grease a large loaf pan and pour
the batter into the pan. Bake in a preheated 350F.
oven for 1 hour. Remove from oven and set on a wire
rack to cool.
