Banana Bread with Strawberries
Makes 1 Loaf

1 3/4 cups all-purpose flour
1/2 cup rolled oats
2 1/2 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/3 cup shortening
3/4 cup sugar
1 tablespoon lemon rind (grated)
2 eggs (beaten)
1 cup mashed banana
1/2 cup mashed strawberries (fresh or frozen)

In a bowl combine the flour, rolled oats, baking
powder, baking soda and salt. Mix till blended. In a
separate bowl combine the shortening and sugar, beat
for 2 minutes. Slowly add the eggs and continue to
beat till well blended. Add in the chopped lemon rind
and the mashed banana and mashed strawberries. Pour
into a lightly greased loaf pan and bake 350 degrees
for 60 - 65 minutes.
