Peanut Butter Gingerbread Cookies Recipe

  • 1 2/3 cups peanut butter chips
  • 3/4 cup butter, softened
  • 1 cup packed dark brown sugar
  • 1 cup dark corn syrup
  • 2 eggs
  • 5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon kosher salt

Place peanut butter chips in microwave-safe bowl.  Microwave on medium (50%) for one minute, then stir.  If necessary, microwave for additional 15 seconds at a time and stir after each heating  until chips are melted.

Beat melted chips and butter in large bowl until well blended.   Add brown sugar, corn syrup and eggs.  Beat until fluffy.  Continue...
