Buttermilk Cornbread Muffins Recipe 

 Corn bread muffins2
    • 1 1/4 cups corn meal
    • 1 cup buttermilk
    • 3/4 cup whole wheat flour
    • 1/4 cup toasted wheat germ
    • 1/4 cup vegetable oil
    • 1 egg
    • 3 tablespoons honey
    • 2 teaspoons baking powder
    • 1/2 teaspoon kosher salt

Preheat oven to 400 degrees.  Grease mini muffin pans well.  Blend all ingredients until just moistened.  Bake for 7 minutes.  Makes 2 to 3 dozen mini muffins.
