Cool Cucumber Salad
Makes 6 servings
2 cups thinly sliced cucumbers (4 small or 2 large cucumbers)
1/2 tsp salt
1 cup thinly sliced red onion
1/4 cup vinegar
1/4 cup water
1 Tbsp sugar (can use sugar substitute)
1/2 tsp Dill Weed
1/4 tsp Coarse Ground Black Pepper
Pinch Ground Red Pepper (also know as Cayenne)
Place cucumber slices in a medium bowl. Sprinkle with salt. Stir in onions.
Mix vinegar, water, sugar, Dill Weed, Coarse Ground Black Pepper and Ground Red Pepper in a small bowl. Pour over cucumber mixture; toss lightly. Cover
Refrigerate 1 hour or until ready to serve. Toss before serving.
Flavor Variation: Sour Cream Dill Cucumber Salad
Prepare cucumbers and onion as directed above. Omit vinegar, water and sugar. Mix 1/2 cup sour cream with Dill Weed, Coarse Ground Black Pepper and Ground Red Pepper with wire whisk in small bowl until will blended. Toss with cucumber mixture.
