Spicy Beans with Tomatoes
Prep: 15 min, Cook: 25 min.
2 tsp. corn or vegetable oil
3/4 yellow onion, chopped
2 cloves garlic, minced
1-1/4 lbs. canned black beans, rinsed and drained
1/4 cup plus 3 Tbs. water
2 tsp. lemon juice
2 tsp. lime juice
3/4 tomato, finely chopped
3 ounces canned or fresh green chilies, seeded and
chopped (wear rubber gloves)
1-1/4 scallions, trimmed and minced
1/4 tsp. hot red pepper sauce
1/4 cup cilantro or parsley, minced
1/8 tsp. salt (optional), or to taste
Heat oil in a heavy saucepan over medium heat. Sauté
onion 4-5 minutes or until translucent. Add garlic and
sauté another 2 minutes. Add beans and water and
simmer about 15 minutes or until beans are very soft.
Transfer to a food processor or bowl and process until
smooth. Set aside to cool. Combine with remaining
ingredients and pepper to taste in a non-reactive
bowl. Mix thoroughly before serving.
