I have a dessert that I came up with for a block party one year that
had a nice "surprise" element to it. I took a seedless watermelon and
sliced three 1" thick sections of it and removed the rind. Then I
sliced up some strawberries and kiwi, and then prepared an "icing made
from cream cheese and confectioner's sugar.
Dry off the fruit as much as possible. Then put a watermelon layer on a
platter and spread a layer of "icing" on it. Arrange the strawberries
in a layer, then put the next watermelon layewr on, ice it, then the
kiwi, then the next watermelon layer, then ice the whole thing so it
looks like a cake. Sometimes if the thing doesn't want to behave I use
skewers to hold it together. Then chill the fruit "cake".
When you cut a slice, it's quite a colorful surprise.
A really unique way to serve fruit!
