[realfood] Spanish Casserole

Spanish Casserole
 
 
 
1c. uncooked rice
1c. Whole kernel corn
1 1/2 lb hamburger (the leaner the better)
16 oz tomato sauce (spaghetti sauce works well)
1/2 c. Chopped green pepper
1/2c. onion chopped
1c. water
salt and pepper
 
 
 
In bottom of 2 quart casserole put 1 cup rice, layer corn (drained) on top of rice.  Sprinkle with salt and pepper. Add 8 ozs tomato sauce and 1/2 c of water.  Add the chopped pepper and onion.  Add hamburger and sprinkle with salt and pepper.  Cover with the rest of the sauce and water.  Cover with foil and cook for 1 hour at 350 degrees.  Remove cover and cook for 1/2 hour more.
