[realfood] Baked Shredded Beef Shepherd's Pie---with Veggies

SHREDDED BEEF SHEPERD'S PIE

2 cups beef broth
2 tbs flour
2 1/2 cups shredded pot roast
10 oz box frozen peas and carrots, thawed
1/2 tsp dried oregano
21 oz pkg prepared mashed potatoes
Paprika, for sprinkling

Heat oven to 350 degrees. Coat a 1 1/2 quart casserole dish with cooking spray. Whisk broth and flour together in a saucepan. Heat until simmering. Simmer 1 min. or until thickened.

Stir in roast, peas and carrots and oregano. Spoon mixture into casserole. Heat potatoes as per package directions. Spoon over top of meat mixture, sprinkle potatoes with a little paprika. Bake 30 min. Let stand 15 min. before serving. MAKES 4 SERVINGS.*
