[realfood] 3 Banana Crunch Loaves or 12 Muffins---with Granola & Nuts

BANANA CRUNCH LOAF

2 cups flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
2 eggs
3/4 cup light brown sugar
1/2 cup unsalted butter, melted
2 bananas, mashed
1 tsp vanilla
1/2 cup chopped walnuts
3/4 cup low fat granola (without raisins), lightly crushed

Heat oven to 350 degrees. Coat 3 loaf pans with cooking spray. In a bowl, whisk together flour, baking powder, cinnamon and salt. Make a well in the center of the dry ingredients, set aside. In a medium bowl, combine egg, brown sugar and butter. Whisk until smooth.

Add mashed banana and vanilla. Pour banana mixture into well of dry ingredients. Stir until moist. Stir in walnuts. Divide batter among the pans. Sprinkle granola over all pans.

Bake 33 min. or until set and golden around the edges. Let the loaves cool in the pans 5 min. Transfer to rack, serve warm.  NOTE--- This batter may also be prepared as 12 standard muffins. Reduce baking time to 25 min. MAKES 3 LOAVES, 6 SLICES PER LOAF OR 12 MUFFINS.*
