[realfood] Regional variations in recipes

There are so many different ways to "cross the creek", as we say in
the part of Texas where I live, that I really enjoy following the
suggestions for recipe variations following original postings. I
understand that there are certain dishes that people feel very
strongly about. Chili is one such, and fights have been fought over
whether beans as an ingredient are required or prohibited.
*HOWEVER*, if a person does not normally eat chili it would be hard
to know which way he preferred it unless he tried it both ways. The
way he likes it is the way he should make it, I guess.
I like recognizing the usernames of people whose recipes have
interested me or those I have tried out in my home. All of you seem
like my friends.
I like pasta and I like to try out new sauce recipes so if it's OK
with Tamara, I'd like to try out her recipe for the Bolognese Sauce
and then try Robert's suggestion about the chicken livers. I once
thought I didn't like anchovies, until I tried them in my sauce! And
if Victor could let us know what part of Tamara's recipe he didn't
like and what he would do differently, I'd like to try it that way,
too.
I have very strong opinions about my food and I'll never eat chili
with beans in it again if I have a choice, but I ate it often enough
to know I like it much better without beans. I'll just let someone
else eat the chili with beans!
