New York Style Cheesecake
2 cups, graham cracker crumbs 1/2 cup walnuts, finely chopped 1/2 tsp. ground cinnamon 1/2 cup butter, melted 2 1/2 cream cheese, softened 1 cup sugar 2 tsps. vanilla 1/2 tsp. almond extract 3 eggs 3 cups sour cream 1/4 tsp.salt fresh fruits, for garnish
1. To prepare the crust: Combine the walnuts, cinnamon and graham cracker crumbs. Add the melted butter. Reserve 1/2 ot the mixture for the top. Press the rest on the bottom and sides of an 8 inch springform pan. 2. Using a mixer, beat the cream cheese, sugar, vanilla, almond extract and salt until the mixture becomes smooth. Add the eggs slowly while beating at a slower pace. 3. To prepare the cheesecake: Place the mixture in the crust and top with the reserved crumbs. Bake in an oven at 375 F for at least an hour. Cool on a wire rack. Chill for 5 hours. 4. Garnish with fresh fruits before serving. |
